Cashew Coffee Cherry Balls
We have the perfect sweet treat for you if you’re suffering from a lack of sugar. We all go through it, but it’s a necessity if you want to kick the habit and introduce healthier alternatives.
We have discussed sweet food alternatives before and now it’s time to put the best of those to good use with this naturally sweet, energy-boosting treat.
Ingredients:
- 1 cup cashews
- ½ cup dried tart or bing cherries
- ½ cup shredded coconut
- 2 tbsp almond flour
- 1 tbsp honey
- 2 tsp finely ground GRIND coffee
- ¼ tsp vanilla
- ¼ tsp salt
Instructions:
In a food processor, add the cashews and process until a smooth nut butter forms, about 5 to 7 minutes.
Add the remaining ingredients and pulse a few times to incorporate everything and break up the cherries.
Roll in 12 tablespoon sized balls. Store in an airtight container in the fridge for up to 2 weeks.
