Coffee Hazelnut Granola

Hazelnut Coffee Granola
Makes about 6 cups

½ cup coconut oil, melted
½ cup honey (or maple syrup)
2 tbsp almond butter
2 tsp vanilla extract
3 cups oats
1 cup coconut flakes
1 cup chopped hazelnuts
¼ cup finely ground
GRIND dark roast
½ tsp salt

Preheat the oven to 325F. Line a baking sheet with parchment paper.
In a large bowl, whisk together the coconut oil, honey, almond butter and vanilla until smooth.

Add the oats, coconut flakes, hazelnuts, ground coffee and salt. Stir to evenly mix and coat everything.

Transfer to the baking sheet and bake for 20 minutes, stirring halfway through. Allow to cool completely before transferring to an airtight container.
