Green Herbs and Kale Frittata Muffins

Ingredients:

  • 12 eggs
  • ¼ cup chopped scallions
  • ¼ cup chopped parsley
  • ¼ cup chopped basil
  • ¾ tsp salt, divided 
  • 1 tbsp avocado oil
  • ¼ cup chopped onion
  • 1 cup roughly chopped kale
  • 1 clove garlic, minced

Instructions:

Preheat the oven to 350F. Line a muffin tin with 12 muffin cups.

In a large bowl whisk together the eggs, scallions, parsley, basil and ½ tsp of salt.

In a large skillet, warm the oil over medium heat. Add the onion and cook for 5 minutes. Add the kale and cooked for another 5 minutes, until wilted. Once cooked, add the garlic and cook for 1 more minute.

Stir the cooked kale into the egg mixture. Divide the mixture between 12 muffin cups.

Bake for 25 minutes, or until the eggs are set in the center.

Store in an airtight container in the fridge.
