Paleo Lemon Shortbread Cookies [Recipe]

One of the best parts of the holidays is all of the cookies and treats that get shared and passed around. It is just another way that we show people we care about them and to spread holiday joy. But we all know that many of these treats are not good for us and often contain processed ingredients that you know are not good for your health.

Here is a delicious holiday cookie that you can share with your friends and family that you don’t have to feel bad about. These Lemon Shortbread Cookies are so delicious, you would never know that they are made of completely natural ingredients!


Cookie Dough

2 cups almond flour
6 tbsp butter
3 tbsp honey
1/4 tsp vanilla extract
1/8 tsp salt
1 tbsp fresh lemon juice (about half a lemon)

Lemon Glaze

1/2 cup organic powdered sugar
1 tbsp fresh lemon juice (about half a lemon)
1/4 tsp vanilla extract


Preheat your oven to 350º F.

Combine all of your ingredients for the cookie dough into a medium mixing bowl until if forms into one large ball. Refrigerate for 30 minutes.

Remove your dough from the refrigerator and scoop out 1 1/2 inch wide portions.

Line a cookie sheet with parchment paper and add your scoops of dough to the pan, flattening each scoop a bit. Bake for 8-10 minutes. Then remove the cookies from the oven and let cool.

Mix together all of your ingredients for the glaze, whisking until there are no more sugar lumps.

Once your cookies are cooled, use a spoon to glaze each cookie.
