Chicken Zoodle Soup

  • 1 carrot (dice)
  • 1 celery stack (dice)
  • ¼ yellow onion (dice)
  • ½ tbsp. olive oil
  • 1 sprig thyme
  • 1 sprig rosemary
  • 1 bay leaf
  • ½ cup chicken stock
  • ½ cup water
  • 4 oz. chicken (can change based on desired macros)
  • 1 zucchini (spiralized)
  • 1 tbsp. parsley

Directions: 

  • Dice carrot, celery, and onion.
  • Add to medium heat saucepan and sauté in ½ tbsp. olive oil 5-10 minutes
  • Add thyme, rosemary, and bay leaf to veggies
  • Add water and chicken stock
  • Simmer till veggies are tender 5-10 minutes
  • Remove herbs and discard
  • Add 4 oz. of chicken or desired amount to meet macros
  • Spiralize zucchini to make noodles
  • Add zoodles to soup when ready to consume
  • Remove soup from heat and add to bowl
  • Garnish with fresh chopped parsley
  • Enjoy!
