- 4 whole large eggs
- 1 tsp vanilla
- ½ cup stevia
- ¼ cup coconut oil
- 1 cup plain pumpkin puree (not pumpkin pie filling)
- ½ cup coconut flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 serving morellifit nutrition protein powder
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- ½ tsp ground ginger
- ½ tsp ground cloves
- ½ tsp pumpkin pie spice
Directions
- Preheat oven to 350 degrees
- Add 4 egg to mixing bowl
- Whisk together with vanilla and stevia
- Add coconut oil
- Add pumkin
- Add coconut flour
- Add protein powder
- Add baking soda and baking powder
- Add all other spices
- Mix together until incorporated
Add liners to muffin pan
Fill liners to ¾ with mixture
Bake 350 degrees for 30 minutes or golden brown and a toothpick comes out clean
