Paleo Protein Pumpkin Muffins

  • 4 whole large eggs
  • 1 tsp vanilla
  • ½ cup stevia
  • ¼ cup coconut oil
  • 1 cup plain pumpkin puree (not pumpkin pie filling)
  • ½ cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 serving morellifit nutrition protein powder
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • ½ tsp ground ginger
  • ½ tsp ground cloves
  • ½ tsp pumpkin pie spice

Directions

  • Preheat oven to 350 degrees
  • Add 4 egg to mixing bowl
  • Whisk together with vanilla and stevia
  • Add coconut oil
  • Add pumkin
  • Add coconut flour
  • Add protein powder
  • Add baking soda and baking powder
  • Add all other spices
  • Mix together until incorporated

Add liners to muffin pan

Fill liners to ¾ with mixture

Bake 350 degrees for 30 minutes or golden brown and a toothpick comes out clean
