Protein Blueberry Muffins

Ingredients

  • 3 eggs
  • ¼ cup yogurt
  • ½ cup apple sauce
  • 1 tsp vanilla
  • ¼ cup almond milk
  • ⅛ tsp freshly ground ginger
  • 1 cup oat flour
  • 1 cup almond flour
  • 2 scoops Morellifit Nutrition Protein (we recommend vanilla)
  • 1 packet Stevia
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • 1 cup fresh blueberries

Directions

  • Preheat oven to 350º F.
  • Mix all of the ingredients from eggs to ginger in a bowl.
  • Mix the dry ingredients – oat flour to cinnamon in another bowl.
  • Very gently combine the two bowls, and the blueberries, just until moist.
  • Place paper cups in a muffin tin and fill with batter about ⅔ full.
  • Bake for 12 minutes or until the top is just starting to turn golden brown.
  • Let cool.

Makes 12 muffins

Prep and cook time is 25-30 minutes
