Ingredients
- 3 eggs
- ¼ cup yogurt
- ½ cup apple sauce
- 1 tsp vanilla
- ¼ cup almond milk
- ⅛ tsp freshly ground ginger
- 1 cup oat flour
- 1 cup almond flour
- 2 scoops Morellifit Nutrition Protein (we recommend vanilla)
- 1 packet Stevia
- 1 tsp baking powder
- ½ tsp cinnamon
- 1 cup fresh blueberries
Directions
- Preheat oven to 350º F.
- Mix all of the ingredients from eggs to ginger in a bowl.
- Mix the dry ingredients – oat flour to cinnamon in another bowl.
- Very gently combine the two bowls, and the blueberries, just until moist.
- Place paper cups in a muffin tin and fill with batter about ⅔ full.
- Bake for 12 minutes or until the top is just starting to turn golden brown.
- Let cool.
Makes 12 muffins
