These muffins contain the nutrition of zucchini with the protein of Morellifit Nutrition. Make a batch up and keep for a quick breakfast on the way out the door to work.
Ingredients
- 2 cup shredded zucchini
- 2 eggs
- 1 mashed ripe banana
- 1 tsp vanilla
- ¼ cup coconut milk
- 3 scoops Morellifit Nutrition Protein (we recommend vanilla)
- 1 cup coconut or almond flour
- 2 tbsp baking powder
- 1 tbsp cinnamon
- 1 tsp salt
Directions
- Mix the dry ingredients together.
- Mix the wet ingredients together:
- Gently fold the wet ingredients with the dry ingredients until mixed. Do not overmix!
- Bake in a 350º oven for 10 minutes or until a knife comes out clean.
