Zucchini Protein Muffins

These muffins contain the nutrition of zucchini with the protein of Morellifit Nutrition. Make a batch up and keep for a quick breakfast on the way out the door to work.

Ingredients

  • 2 cup shredded zucchini
  • 2 eggs
  • 1 mashed ripe banana
  • 1 tsp vanilla
  • ¼ cup coconut milk
  • 3 scoops Morellifit Nutrition Protein (we recommend vanilla)
  • 1 cup coconut or almond flour
  • 2 tbsp baking powder
  • 1 tbsp cinnamon
  • 1 tsp salt

Directions

  • Mix the dry ingredients together.
  • Mix the wet ingredients together:
  • Gently fold the wet ingredients with the dry ingredients until mixed. Do not overmix!
  • Bake in a 350º oven for 10 minutes or until a knife comes out clean.
